Quick and Easy Veggie Chili<\/strong><\/p>\n

Ingredients:<\/strong><\/p>\n

• 1 large diced cooking onion<\/li>\n
• 3 minced garlic cloves<\/li>\n
• 1 tbsp olive oil<\/li>\n
• 796 ml can crushed tomatoes<\/li>\n
• 796 ml can tomato sauce<\/li>\n
• 2 tbsp chili powder<\/li>\n
• 1 \u00bd tbsp ground cumin<\/li>\n
• 2 tbsp paprika<\/li>\n
• \u00bd tsp cayenne pepper<\/li>\n
• \u00bd tsp pepper<\/li>\n
• 2 large diced bell peppers (preferably brightly colored)<\/li>\n
• 340 g package of tofu meat substitute (such as Yves Veggie Ground Round)<\/li>\n
• 540 ml can white kidney beans (drained and rinsed)<\/li>\n
• 540 ml chickpeas (drained and rinsed)<\/li>\n<\/ul>\n

  In a large sauce pan over medium heat, cook onions and garlic in oil until soft (approximately 5 minutes). Add crushed tomatoes, tomato sauce and seasonings. Cook for 5 minutes, stirring often to develop flavor. Add diced peppers, tofu and beans. Cook, stirring occasionally, until hot.<\/p>\n

  This yummy chili is filled with iron, folacin, Vitamin C, fibre and protein. A great way to warm up!<\/em><\/strong><\/p>\n
