Quick and Easy Veggie Chili
Ingredients:
- 1 large diced cooking onion
- 3 minced garlic cloves
- 1 tbsp olive oil
- 796 ml can crushed tomatoes
- 796 ml can tomato sauce
- 2 tbsp chili powder
- 1 ½ tbsp ground cumin
- 2 tbsp paprika
- ½ tsp cayenne pepper
- ½ tsp pepper
- 2 large diced bell peppers (preferably brightly colored)
- 340 g package of tofu meat substitute (such as Yves Veggie Ground Round)
- 540 ml can white kidney beans (drained and rinsed)
- 540 ml chickpeas (drained and rinsed)
In a large sauce pan over medium heat, cook onions and garlic in oil until soft (approximately 5 minutes). Add crushed tomatoes, tomato sauce and seasonings. Cook for 5 minutes, stirring often to develop flavor. Add diced peppers, tofu and beans. Cook, stirring occasionally, until hot.
This yummy chili is filled with iron, folacin, Vitamin C, fibre and protein. A great way to warm up!
