Quick and Easy Veggie Chili


  • 1 large diced cooking onion
  • 3 minced garlic cloves
  • 1 tbsp olive oil
  • 796 ml can crushed tomatoes
  • 796 ml can tomato sauce
  • 2 tbsp chili powder
  • 1 ½ tbsp ground cumin
  • 2 tbsp paprika
  • ½ tsp cayenne pepper
  • ½ tsp pepper
  • 2 large diced bell peppers (preferably brightly colored)
  • 340 g package of tofu meat substitute (such as Yves Veggie Ground Round)
  • 540 ml can white kidney beans (drained and rinsed)
  • 540 ml chickpeas (drained and rinsed)

In a large sauce pan over medium heat, cook onions and garlic in oil until soft (approximately 5 minutes). Add crushed tomatoes, tomato sauce and seasonings. Cook for 5 minutes, stirring often to develop flavor. Add diced peppers, tofu and beans. Cook, stirring occasionally, until hot.

This yummy chili is filled with iron, folacin, Vitamin C, fibre and protein. A great way to warm up!
